- 2 tsps Basil Pesto
- Iceland Mozzarella

Method
- Pre-heat oven to 200°C/fan 180°C/Gas 6 and place the med veg in a large ovenproof baking tray.
- Place the chicken breasts and basil pesto in a bowl and season with salt and black pepper and mix until the chicken is well coated.
- Place the coated chicken breasts in the tray nestled within the vegetables.
- Place in the oven for 25-30 mins, turn the chicken and mix the veg halfway through the cook time. Ensure chicken is cooked through.
- To serve tear the mozzarella on top and sprinkle with fresh basil leaves or dried basil.
