Ingredients

  • Iceland Chicken Breast Fillets
  • Iceland Mediterranean Style Vegetables
  • 2 tsps Basil Pesto
  • Iceland Mozzarella

Method

  1. Pre-heat oven to 200°C/fan 180°C/Gas 6 and place the med veg in a large ovenproof baking tray.
  2. Place the chicken breasts and basil pesto in a bowl and season with salt and black pepper and mix until the chicken is well coated.
  3. Place the coated chicken breasts in the tray nestled within the vegetables.
  4. Place in the oven for 25-30 mins, turn the chicken and mix the veg halfway through the cook time. Ensure chicken is cooked through.
  5. To serve tear the mozzarella on top and sprinkle with fresh basil leaves or dried basil.
