What you’ll need
Ingredients
- Iceland Chicken Breast Fillets
- Iceland Gem Lettuce
- 1 Iceland Avocado
- Handful of Iceland Cherry, Vine or Baby Plum Tomatoes
- 4 Rashers Iceland Bacon
- 2 tbsp Olive Oil
- Zest and juice of 1 lemon
- 1 tsp Mixed Herbs
- 4 Iceland Free Range Eggs
- Parmigiano Reggiano
- Caesar Dressing
- Handful of Maretti Bruschette Crisps

Method
- Place the chicken breasts in a bowl and mix with the marinade ingredients until well coated.
- Heat a frying pan or griddle and add the chicken breasts and cook on both sides until golden brown and cooked through. Cover and set to one side to rest.
- While your chicken is cooking and resting, cook the bacon and boil the eggs.
- When you are ready to serve, slice chicken into thick slices, chop up the bacon and slice the eggs.
- Arrange on a large plate all the components and finally pour over the dressing and serve. Enjoy!
