What you’ll need

Ingredients

  • 100g Cooked Long Grain Rice
  • 150g Fresh Diced Chicken
  • 500g carton Tomato Passata
  • 1 Small Pepper, diced
  • 1 Small Onion, diced
  • 1 tbsp Natural Yoghurt
  • 1 tsp Single Cream
  • 1 handful of Desiccated Coconut
  • ½ tsp Garlic Puree
  • ½ tsp Ginger Puree
  • ½ tsp Garam Masala
  • ½ tsp Paprika
  • 1 tsp Turmeric
  • 1 Handful of frozen peas
  • 1 tbsp Rapeseed Oil

Method

  1. Cook the rice as per the packet instructions adding half of the turmeric powder to the water.
  2. Heat the oil in a saucepan over a medium heat. Add the onions and peppers and chicken and cook for 3 or 4 minutes. Add the ginger, garlic and spices and continue to cook for a further 5 minutes over a low heat. Add a splash of water if necessary.
  3. Add the tomato puree, passata and coconut. Bring to a simmer and cook gently for 15 minutes.
  4. Stir in the frozen peas, cream and yoghurt and heat for a further 3 minutes.
  5. Serve with the cooked rice.
