A super simple and delicious recipe that the whole family will LOVE! This Slow Cooker Whole BBQ Chicken is made in the slow cooker and costs around £2 per person to make, so is brilliant value for money. Slow cookers have been proven to be cheaper than conventional ovens to run so it means you’ll be saving on those energy bills too, win-win! Just make sure your slow cooker is big enough to fit a whole chicken in for this one, if not – try the recipe with chicken breast fillets, it works just as well. See method
What you’ll need
Ingredients
• 1 Onion, thickly sliced
• 1 Iceland British Medium Whole Chicken 1.3kg
• 4 tbsp Schwartz Classic BBQ Seasoning
• Iceland Mediterranean style vegetables in a basil seasoning 500g
• Iceland Sweet Potato Fries 600g
• 1 tbsp Vegetable Oil
• 8 tbsp BBQ Sauce
Utensils
• Large slow cooker
• Sharp knife and chopping board
• Pastry brush
• Small bowl
• Baking tray
Method
- Peel and slice the onion before scattering over the base of your slow cooker.
- Remove any trussing string from the chicken and place, breast-side up, on top of the onions.
- Pour the oil into a small bowl and stir in the BBQ seasoning. Then, brush the mix over the chicken.
- Cover the slow cooker with the lid and cook on high for 3 hours.
- Add the Mediterranean vegetables and brush the BBQ sauce over the chicken. Cook for another 1 hour until the chicken is tender and thoroughly cooked – the meat should be almost falling off the bones. Remove the lid and pierce the thickest part of the bird with a skewer and make sure the juices run clear.
- Transfer the chicken carefully to a board to rest.
- Place the sweet potato fries on a pre-heated baking tray near the top of the oven for 18-20 minutes. Turning halfway through cooking time. Or, try them in an air fryer until crispy!
- Finally, serve the chicken with the fries and vegetables. Enjoy your slow cooker whole chicken today!
