What you’ll need

Ingredients

  • Iceland 4 Pork Medallions
  • Iceland Savoy Cabbage
  • Iceland Leeks (250g)
  • Iceland Perfect Mash
  • 2 Tsp English Mustard

Method

  1. Season your pork medallions with salt and pepper on both sides before laying them in the air fryer. Cook at 180 for 12-15 minutes.
  2. Slice your leeks into discs and shred the cabbage. Heat up a tablespoon of oil in a pan an add the vegetables. Season to taste and cook for 10 minutes until softened but still with a bit of crunch.
  3. Meanwhile, cook your perfect mash in the microwave. Once cooked, add the mustard before beating together until smooth.
  4. Serve the pork on top of the mash with a side of your greens and any juice from the bottom of the air fryer.
