- Iceland 4 Pork Medallions
- Iceland Savoy Cabbage
- Iceland Leeks (250g)
- Iceland Perfect Mash
- 2 Tsp English Mustard

Method
- Season your pork medallions with salt and pepper on both sides before laying them in the air fryer. Cook at 180 for 12-15 minutes.
- Slice your leeks into discs and shred the cabbage. Heat up a tablespoon of oil in a pan an add the vegetables. Season to taste and cook for 10 minutes until softened but still with a bit of crunch.
- Meanwhile, cook your perfect mash in the microwave. Once cooked, add the mustard before beating together until smooth.
- Serve the pork on top of the mash with a side of your greens and any juice from the bottom of the air fryer.
