Whether you’re looking for a healthy breakfast alternative, or a quick afternoon snack, these blueberry pancakes are perfect for filling you up and satisfying your sweet tooth. Stack them up and finish them off with your favourite toppings – but be sure you make extra as these pancakes will be hit with all the family.

  • 2 ripe Bananas
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 70g Porridge Oats
  • 50g Del Monte Frozen Blueberries

Method

  1. Mash the bananas in a large bowl until smooth. Mix in the eggs and vanilla until well combined, then mix in the oats. Carefully fold in the blueberries.
  2. Heat a medium non-stick frying pan over medium heat. Add a scoop of the pancake batter. Smooth out to form an even layer. Cook for 2–3 minutes until you start to see bubbles forming on the surface. Flip and cook until the other side is golden brown.
  3. Garnish your pancakes with your favourite toppings!
